Wednesday (1/6/11)


Meal of the Day:

White Chicken Chili garnish with Jack Cheese and Sour Cream
Rice
Corn Bread

  1. White Chicken Chili

    2 Cups of Cooked Chicken
    1 Medium Onion, Diced
    1 14.5 oz Can of Diced Tomatoes with Chiles
    1 14.5 oz Can of Chicken Broth
    2 14.5 oz Cans of Great Northern Beans
    2 Tablespoons of Flour
    1 Teaspoon of Chili Powder
    Oil

    Sauteed Diced Onion in small amount of olive oil, until onions are tender. Add the flour and chili powder to onions. Whisk in chicken broth to get smooth consistency. Then add in remaining cannned ingredients and bring to boil. Once boiled add chicken and then simmer for 15 mins.

    Corn Bread

    Jiffy Corn Bread Mix
    1 egg
    1/3 cup of milk
    1/2 frozen corn

    Mix and back according to directions.

    *We also sometimes add shredded cheddar to the corn bread as well
